ZUCCHINI SQUASH RELISH

10 cups chopped squash, do not peel
1 tsp. nutmeg
4 cups onion, chopped
2 Tbsp. mustard seed
5 Tbsp. salt
2 Tbsp. turmeric
2-1/2 cup vinegar
1/2 Tbsp. black pepper
6 cups sugar
1 red pepper, chopped fine
1 tsp. dry mustard
1 green pepper, chopped fine

Place squash, onion, and salt in bowl; let stand overnight. Drain well.
Add enough water to cover; drain well again. Add remaining ingredients; mix well. Boil 3 minutes; place in pint jars and seal while hot. Process in boiling water bath for 15 minutes
